Introduction to Morasa Polow

Persian cuisine had many advancements in the Safavid era as various ceremonial Persian dishes were invented during this period, including Morasa Polow. Such food is one of the original Persian dishes often the main course of ceremonies due to its attractive colour scheme. Morasa Polow is one of the traditional dishes of Qazvin province prepared for formal ceremonies and weddings. This mixed pilaf is also known as Jewelled Rice because of the brilliant garnishes in the food. Morasa means jewelry, meaning it is decorated with embellishing substances like jewelry. This tasty dish is prepared by combining white pilaf with several slices such as almonds, pistachios, orange peel, barberry, and raisins, including chicken or mutton.

The food decoration is as important as the quality of the raw materials and how it is cooked; since all kinds of slices are decorated with rice, it is aesthetically similar to the eye-catching Iranian carpet. Morasa Polo is one of those homemade dishes that its raw materials do not take much time to prepare. You have to finish it with all your creativity and taste. When making Jewelled Rice for a gathering, you will see the guests praise it for a long time after eating. Undoubtedly, the colourful and pleasing appearance of the food consists of the slivers, the sour and sweet taste of barberry, and raisins, besides the saffron aroma will remain in everyone’s mind.

The pilaf contains A, C, E, K, B vitamins, carbohydrates, sodium, calcium, protein, folic acid, selenium, potassium, magnesium, manganese, phosphorus, iron, fiber, zinc, and omega-3 fatty acids.

The amino acid tryptophan in the food has a significant effect on the serotonin hormone production in the blood; A hormone that promotes joy and vitality in people, helping them relieve stress, anxiety, and depression. Improving the brain function and nervous system, Morasa Polow can strengthen memory, also prevent Parkinson’s and Alzheimer’s disease. This delicious food contains calcium, magnesium, phosphorus, and selenium; Vitamins that affect the strength of bones and teeth, preventing osteoporosis and osteoarthritis. Dietary protein also plays an influential role in increasing energy and the body’s general strengthening; thus, the food is beneficial for athletes and bodybuilders.

People with anemia and pregnant women can make the most of such food; Because it contains folic acid, iron, and vitamin B12, it increases the number of red blood cells and eliminates anemia. Of course, saffron should be eliminated for pregnant women. Other properties of Jewelled Rice include:
